Hello there!

I have officially moved into my own place for the summer (with a couple roommates) but I am now grocery shopping and cooking for myself rather than being on a college meal plan and OH BOY adulting is quite interesting.  How do you guys do this all the time???

Anyway, I decided to compile some pics of recent eats to share with you to hopefully inspire you to eat more toast, or give you some ideas for meals if you cook for yourself, or just to feed your eyes I guess?

Breakfasts:

Avo toast with fresh cherries.

Massive cereal bowl with kashi kids cinnamon buns, granola, chopped pistachios, banana, and almond milk.

Mango yogurt, granola, blueberries and a big spoonful of almond butter.

Lunch:
Roasted sweet potatoes (chop, drizzle with olive oil, and roast in a 400 degree oven for 20 mins), spinach, avocado, and an egg.

A tempeh caesar salad on top of kale and fresh veggies- the dressing was a cashew based cream and it was really good! I got a cookie dough cupcake as well, but forgot to snag a photo.


Snacks/desserts:

Mitchells vegan chocolate and raspberry sorbet with peanuts- like chocolate pb and j ??? big yum.

Cannolis from holy cannoli- I got pistachio and mom got oreo and omg they were good.

Unpictured snacks:

Deluxe mixed nuts ( I get the big unsalted container from Aldi’s and I eat some every single day). If you are what you eat, I am basically an almond.

Cheeze-its

Chocolate covered almonds

Pita chips and hummus

Dinner:

An AMAZING salmon fillet on top of a grain mixture with corn beans and pepper. The sauce was a sweet coconut curry and it was phenomenal I ate every bite.

Pita pocket sandwich from Brassica- mine was on the left with chicken, hummus, pickled veggies, roasted eggplant, tahini herb sauce.I definitely want to try to recreate this at home!!

Roasted chicken, penne with pesto, and frozen veggies- an easy and cheap meal- add herbs to feel fancy

A bit of leftover salmon, mixed frozen veggies, and a rice pilaf

Chicken and veggies sauteed in teriyaki sauce and topped with everything but the bagel seasoning, because it truly goes well on anything.
